Introducing the Northern Rivers Rum Special Cask Series (Viva), the pinnacle of Soltera craft and the distillery's first Pure Single Rum. This extraordinary expression marks a significant milestone, showcasing the transformative power of time and the unique terroir of the Tweed Valley in the Northern Rivers of New South Wales.
This rum:
- had a long fermentation in early summer 2021 using Tweed Shire molasses from the Condong Sugar Mill
- double distilled in a copper pot still in late 2021
- had some vapour spice infusion during distillation
- aged for over three years in a 115-litre American oak ex-bourbon cask that was re-coopered in South Australia (single cask release)
The subtropical climate of Cabarita Beach accelerates the ageing process, creating a rich interplay between the rum and its barrel. The result is a deeply complex spirit with enhanced flavour layers of caramel, spice, and tropical fruit, all infused with the region's signature salty coastal influence.
