Caba Colada

The quintessential holiday cocktail is best served by the beach, Cabarita Beach that is! Add 15-30ml of coconut tequila to make it like The Burrow's signature Caba Colada.

Pina Colada
  • 45ml Soltera Rum Blanco
  • 120ml pineapple juice
  • 30ml coconut cream (Coco Lopez)
  • squeeze of fresh lime

Add a handful of ice to a cocktail shaker with all the ingredients, shake and then strain into your fave cocktail glass. Garnish with a pineapple wedge or a maraschino cherry.

Classic Daiquiri

A classic daiquiri is crisp, light and refreshing. This Cuban cocktail was invented more than 100 years ago in the small mountain mining village of Daiquirí. It's known for its simple yet perfectly balanced flavours. Swap lime juice for grapefruit juice and you have yourself a Hemingway daiquiri.

Soltera Rum Daiquiri
  • 45ml Soltera Rum Blanco
  • 30ml fresh lime juice 
  • 15ml simple syrup

Add the ingredients to a cocktail shaker with ice and shake well. Serve in a chill martini glass with a slice of lime to garnish. Image by @apothecary.studios

Strawberry Daiquiri

When strawberries are in season it's hard to look past this delightfully refreshing summer cocktail.

Strawberry daiquiri

  • 45ml Soltera Rum Blanco
  • 3-4 sliced strawberries
  • A dollop of mango sorbet
  • 15ml lime juice
  • 10ml simple syrup (to taste for sweetness)
  • 1 cup of ice (or less)

Add ingredients to a blender and voilà! Summer is served in a champagne coupe. 

Passionfruit Mojito

Prepare for a flavour explosion. You may as well double the recipe now because one is never enough.

  • 45ml Soltera Rum Blanco
  • Pulp from 1 fresh passion fruit
  • 120ml pineapple juice
  • 30ml club soda
  • 1 slice of fresh ginger
  • 4 fresh mint leaves
  • 1/2 lime thickly sliced
  • 1 - 1/2 tsp of raw cane sugar

Muddle ginger, mint leaves, lime, sugar in a cocktail shaker. Add Blanco, passion fruit pulp, pineapple juice, a handful of crushed ice and shake well. Serve in a highball glass, top with soda and garnish with fresh mint leaves.

Lime spritz

The aroma and flavour of Blanco make an honest appearance in this deceptively simple serve.

Rum lime soda

  • 30ml Soltera Rum Blanco
  • 120ml club soda
  • squeeze of lime

Serve on the rocks and garnish with a wedge of lime and mint leaves.

Light 'n' Breezy

Look on the bright side and turn a traditional dark 'n' stormy into a light 'n' breezy.

  • 30ml Soltera Rum Blanco
  • 120ml ginger beer
  • squeeze of fresh lime

First pour Blanco over a handful of ice in a glass, slowly add ginger beer and garnish with a wedge of lime. ​  

Strawberry rose water mojito

First make a strawberry rose water syrup by using a small blender to blend: 9 large strawberries with a teaspoon of vanilla extract, half a teaspoon of rosewater and a quarter of a cup of sugar (to suit tastes). You should get about a cup, enough for four mojitos.

  • 20 fresh mint leaves
  • 60ml Strawberry-Rose Syrup
  • 45ml Soltera Rum Blanco
  • 30ml fresh lime juice
  • club soda
  • 1 lime wedge

Muddle mint leaves in a tall glass. Add strawberry-rose syrup, Soltera Rum Blanco, lime juice and lots of ice. Top with club soda and a freshly squeezed lime wedge. Stir.
